Using Notepad++, fat enemies can be assigned different guns (only for the Fat Soldier Gunners) and melee weapons (pretty much every other type). Just replace their sprite ID with the sprite ID of an enemy using that weapon.

Keep in mind that melee-based fat enemies can't use guns and vice-versa. Also, make sure that you edit the sprites to fit the enemy's new appearance. When they take fatal damage, they will place the death animation of the original fat enemy you replaced.
