Did you know that overflowing sewers are the reason rhubarb first grew in Scotland? It all started in 1679 at Prestonfield House, when James Dick, the estate’s owner, was elected Lord Mayor of Edinburgh. At the time, the city faced a massive sanitation crisis—overcrowded buildings reached up to 14 stories high, and people disposed of waste by tossing it out the window. To everyone’s surprise, Mayor Dick offered to collect the city's waste at his own expense and transport it back to his countryside estate. While many were baffled by such a nobleman volunteering for such a foul job, he had a clever reason. Dick had fallen in love with rhubarb, a tart and unpopular plant, and discovered that human waste made an incredibly effective fertilizer. He redirected the city’s streams of filth into his rhubarb patch, and the results were extraordinary. Today, the restaurant at Prestonfield House is called “Rhubarb,” and it serves dishes made with some of the finest rhubarb around—grown in soil enriched by 17th-century Edinburgh’s chamber pots.
