Steps:

- If you just want to override the auto brightness one time, you can swipe down from the top right to get to control center and drag the brightness bar up or down. You can also change the brightness by going into settings, selecting display and brightness and then adjust the brightness slider.

- the brightness there wont disable to auto brightness, the next time you unlock your iPad it will go back to adjusting automatically. To disable it, go back into the settings app and select ‘accessibility’.

- In the accessibility settings, select ‘display and text size’.

- Scroll down and you will see the auto-brightness option. Disable the toggle here to turn it off.
Note that turning off auto brightness may affect battery life and long term display performance
