Cake:
1 1/2 sticks butter, softened
4 oz cream cheese, softened
1 1/2 cups sugar
3 eggs
1 tsp vanilla
1 1/2 cups flour
1/2 tsp salt
1/2 tsp baking powder
1 cup sautéed nuts, roughly chopped
1/2 cup dried fruit, chopped

Topping:
3/4 cup sautéed nuts
1 TBL sugar
1/3 cup dried fruit, chopped

For the topping: In a small bowl, combine sautéed nuts, dried fruit, and sugar. Stir to combine and set aside.

In a medium bowl, combine flour, baking powder, and salt. Whisk to combine.

In a large mixing bowl, whip cream cheese, butter, and sugar until lightened and nearly doubled in volume. Add eggs one at a time on low speed. Don’t add the next egg the previous one has been incorporated completely. Whip this mixture for 4-5 minutes or until lightened and airy.

Slowly mix in the dry goods mixture. Once it’s all in, mix for another minute or so on medium high. Then add chopped nuts, dried fruit, and vanilla extract. Once those are mixed in, carefully pour batter into prepared pan. Sprinkle with the reserved topping.

Bake in a 325 degree oven for 1 hour and 20 minutes or until a toothpick inserted comes out clean. Place a foil tent on the cake around the 45 minute mark so it doesn’t brown too much on top. Allow to cool in the pan for 30 minutes, then remove from the pan and cool completely.

Slice with a serrated knife. Serve at room temp, warm, or cold.
