How to make:
Sweet Curry Spice Blend:
1/2 cinnamon stick
1/2 tsp peppercorn
3 allspice berries
4 cloves
2 cardamom pods
1/2 tsp nutmeg
Sticky rice pudding:
1 cup cooked rice, preferably short-grain
1 cup coconut milk
1 tsp turmeric
2 tsp sugar
Pinch of salt
Banana Curry:
1 cup apple soda or cider
1 batch Sweet Curry Spice Blend
3 TBL butter
1/2 cup dark brown sugar
3 bananas, peeled and halved
1/4 cup rum, optional
Lime zest
Decorative flowers, optional
In a small pot, place 1 tablespoon of butter. Once it's melted, add all the spices from the sweet curry spice blend. Cook them over medium heat until fragrant, a few minutes. Add in your apple juice and bring to a boil. Cover, and cook on low for half an hour. Remove the lid, and boil until only about 1/4 cup liquid remains. Set aside.
For Sticky Rice Pudding: Place coconut milk and rice in a large non-stick pan. Cook over medium heat stirring often until it tightens up. Add turmeric, sugar, and a pinch of salt. Set aside.
For Banana Curry: In a large pan, add the rest of the butter along with brown sugar and reserved spiced cider along with the spices, Bring to a simmer. Add bananas and poach 30 seconds each side. Remove bananas and set aside.
Carefully add rum and light if you wish. Cook sauce until it thickens slighty, about a minute or two. Set aside.
To serve: Place a little sticky rice pudding on a plate. Drizzle on sauce. And sliced bananas. Serve warm or chilled.
