Cathi Misquitta obtained her Doctor of Pharmacy degree from the University of the Pacific, and completed a pharmacy practice residency at the University of California, Davis, Medical Center. She is board certified in both Pharmacotherapy and Geriatrics. She earned her Masters of Business Administration from the UC Davis Graduate School of Management and has been recognized by the California Society of Health-System Pharmacists as a Fellow. She has published papers in professional journals and presented research posters and discussions at national meetings. For fun, Dr. Misquitta obtained certification in personal training and became a yoga instructor. While she dabbled in plant-based cooking for years, she got serious about it shortly after her husband suffered a heart attack. She found a paucity of low-fat, vegan cookbooks with recipes that would fit her busy lifestyle, working full time and raising two children. This prompted her to write Healthy Heart, Healthy Planet with her husband, Dr. Rajiv Misquitta.

Chaat with garbanzo beans and mango

2 lbs. red potatoes, scrubbed (not peeled) and diced
1 1/2 c. garbanzo beans
1/2 red onion, diced
3 mangos, diced
1/2 bunch cilantro, chopped
4 stalks of celery, diced
1 tbsp. chaat masala
1 c tamarind date chutney
rice krispies (1/4 c per serving as an optional topping)

Boil potatoes in a stockpot for 20 minutes or until tender. Drain. Combine all ingredients in a large mixing bowl. Top with rice krispies if desired.

Sushi salad
6 c. brown rice, prepared
1/3 c. seasoned rice vinegar
6 sheets nori (seaweed), torn into bite sized pieces
2 cucumbers, diced
1 c. pickled daikon, diced
2 c. edamame, shelled
1/2 c. pickled ginger
6 red lettuce leaves

Combine all ingredients in a large mixing bowl, sprinkling in the torn nori as you go so the nori doesn't bunch up too much. Serve over lettuce leaves.
