This is a quick and easy recipe made with easy to find ingredients that is delicious not only on rice and veggie dishes but also as a dipping sauce for potatoes and even alone on rice. It's is packed with nutrients and flavor so you don't need very much to impart great flavor on your food.
FRESH HERB CHUTNEY
INGREDIENTS:
1- 6 ounce bag of spinach
1 bunch of cilantro (about a cup, packed)
1 cup of fresh mint
1/4 cup of lime juice
2 tablespoons water
4 Deglet noor dates (about an ounce)
1 Serrano pepper (2 if you prefer it hotter)
4 cloves of fresh garlic
1/2 ounce fresh ginger (about a 1/2" piece)
PREPARATION:
Place water and lime juice in a high powered blender. Add spinach and blend until smooth. Add remaining ingredients and blend again until smooth.
