How To Make Pickle Deviled Eggs

Note: This recipe list is for a doubled recipe.

Ingredients: 2 dozen eggs, 2 full Tbsp Mustard, 2/3cup mayo, 1/2tsp pepper, 1/2tsp salt, 3Tbsp sweet pickle relish, paprika spice (I used smoked paprika), dried or fresh dill, small finger size pickles sliced for garnish, spinach leaves(to prevent sliding of eggs during transport).

Steps: put eggs into water & set on stove then turn burner on high until you get a rapid boil. Boil eggs for 10minutes. Take eggs off stove & put under cold running H2O until pan is cold. Put mustard, mayo, pepper, salt, relish, into medium bowl & mix. Peel eggs & put yolks in separate bowl, & set whites onto spinach leaves in final storage container. Smash egg yolks with fork until desired consistency. Put smashed egg yolks into bowl with the liquid ingredients & mix together. Add pickle juice to make desired creamy consistency. Cut small corner off of a quart size baggie & put egg mixture into baggie (homemade piping bag). Squeeze egg mixture into egg whites. Optional: place small sliced pickles on top with sprinkle of paprika & dill. You can even sprinkle with some crunched up crispy bacon.

Note: I always have a few eggs that don't peel nice & I still use the egg yolks & save the gnarly whites as taste testers when I'm done. :) Yummm.
