It's a delicious and crispy snack that's typically seasoned with spices and served with a variety of dipping sauces. Here's a simple recipe to make Taiwanese popcorn chicken at home:

Ingredients:

1 pound boneless chicken, cut into bite-sized pieces
1/2 cup tapioca starch
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon five-spice powder (optional)
Olive oil, for frying
Fresh basil leaves (optional), for garnish
Marinade:

2 tablespoons soy sauce
1 teaspoon minced garlic
1 teaspoon minced ginger
1/2 teaspoon sugar
1/4 teaspoon white pepper
Instructions:

In a bowl, combine all the marinade ingredients. Add the chicken pieces and mix well. Let it marinate for at least 30 minutes, or you can refrigerate it for a few hours for more flavour.

In a separate bowl, prepare the coating mixture. Combine the all-purpose flour, potato starch or cornstarch, salt, black pepper, garlic powder, paprika, and five-spice powder (if using). Mix well.

Heat vegetable oil in a deep pan or wok to about 350°F (175°C). You'll need enough oil to deep-fry the chicken pieces.

Take a piece of marinated chicken and coat it thoroughly in the flour mixture. Shake off any excess flour. Repeat this step for all the chicken pieces.

Carefully add the coated chicken pieces to the hot oil, a few at a time, to avoid overcrowding the pan. Fry them for about 4-5 minutes, or until they turn golden brown and crispy. Make sure to cook them in batches if needed.

Remove the fried chicken from the oil using a slotted spoon or a wire mesh strainer. Place them on a paper towel-lined plate to drain any excess oil.

Repeat the frying process with the remaining chicken pieces.

Once all the chicken is fried, you can garnish it with fresh basil leaves for added flavour and presentation.
