The default settings for your printer on a macOS Big Sur, can be edited with CUPS (an open-source printing system Apple uses that allows you to configure a printer on a Mac).
The Print dialog not just reflects Apple’s own notion of how printing should work, it also includes functionality from third-party print drivers, the software that tells macOS all of the parameters and special settings of particular output devices.
Before you continue, your printer should have already been setup and listed in your Printers & Scanners in System Preferences.
