Recipe:
Yellow Potage
2 Tbsp vegetable oil, olive oil, butter, lard, or other fat
1 small onion, chopped
3 cloves garlic, minced
1/4 cup white wine or vermouth, optional
1 lb chopped vegetables (3/4 lb potatoes and 1/4 lb carrots is a go-to)
4 cups broth
1/4 cup heavy cream, plus extra for serving
1 sprig of fresh thyme or 1/4 tsp dried thyme leaves
1 bay leaf, optional
1. Heat the oil or fat in a medium saucepan or Dutch oven over medium heat. Add the onion and a pinch of salt, and sauté 3 to 5minutes, or until softened. Add the garlic and sauté 15 seconds
2. Add the white wine or vermouth and cook until most of the liquid has evaporated.
3. Add the remaining ingredients, cover, an bring the soup to a boil. Reduce the heat to medium-low and simmer for 20-309 minutes, or until the vegetables are very soft.
4. Remove the soup from the heat, and blend in a blender or food processor or with a hand-held blender until smooth.
5. Season with salt and pepper. Drizzle heavy cream on top for serving.
Mixed Vegetable Salad
1/4 cup canola oil
1/4 cup extra-virgin olive oil
3 tbsp lime juice
1 1/2 tbsp finely chopped fresh cilantro
1/2 teaspoon salt
1/2 teaspoon ground pepper
2 cups mixed vegetables (steamed: sliced small red potatoes, carrots or beets, green beans, peas; raw: mushrooms, sliced radishes, cucumbers or tomatoes)
6 leaves romaine or leaf lettuce
1 small bunch watercress, large stems removed, optional
1 hard-boiled large egg, sliced
1 thick slice red onion, broken into rings
Goat, feta or farmer's cheese for garnish
1. Whisk canola and olive oils, lime juice, cilantro, salt and pepper in a medium bowl until thoroughly blended. Add mixed vegetables and toss to coat.
2. Line a large serving platter with lettuce. Scoop the dressed vegetables onto the platter. Surround with watercress and top with egg, onion, and cheese, if desired.
