Here is a ICE KNIGHT Fighter Build Guide in Baldur's Gate 3 which deals a TON of cold damage! What's nice about this build is you get to be a full on menace to deal with alongside storm sorcerers/tempest cleric.
The Cold Snap dagger allows us to give vulnerability to cold damage which can double damage from cone of cold. This can absolutely wreck some encounters! This build also functions as a good throwing build too so if you want to do ranged damage you can use hand crossbows or throw items.

This build is a LOT of fun!
