The official way to uninstall Infinity is by using Chronoswitch v7 Downgrader.

Drop the Chronoswitch Downgrader into the /PSP/GAME/ folder and drop the official firmware 6.61 updater into the /PSP/GAME/ folder as well.

Next start the Chronoswitch v7 Downgrader and confirm that you want to downgrade. Afterwards, the install screen for PSP firmware 6.61 will automatically come up.
