Mahalo expert chef Eric Crowley explains the differences between different brands of knife.

Dexter-Russell Knife
---------------------------------------------------------------------

An American-made knife, the Dexter-Russell is on the cheaper end of the knife spectrum, selling for around $30 a piece. These are light-weight, stamped knives that are not as durable as forged knives.c

Henckels Knife
---------------------------------------------------------------------

A forged knife made in Germany, Henckels is heavier than a stamped knife with a full-metal tang around the handle and triple rivets as well. You can spend anywhere from $50 to over $200 on one Henckels knife.c

Global Knife
---------------------------------------------------------------------

A Japanese knife, the Global is an extremely lightweight forged knife that should be used for delicate cuts. Its weight and very fine edge make this very easy to cut yourself with if you are not practiced. Global knives and Shun knives from Japan can range in price from $500 to $600 a piece.

Lamson Knife
---------------------------------------------------------------------

Another American knife, the Lamson is a high-carbon stainless steel forged knife with handles triple-riveted with nickel and silver. Heat and water resistant, Lamsons range in price from $50 to over $100 for a single knife.c

Fury Knife
---------------------------------------------------------------------

Made in Australia, the Fury knife is a one-piece forged knife that is lightweight, though heavier than the Global knife. Fury knives range in price from $120 to $130 a piece.
