This old woman is the second true boss you encounter in the game. She waits for you at the end of the Harata Estate area. Same as a lot of From Software bosses, she has two phases. In the first phase, you'll fight her alone. Practice a little bit, it's all about staying close to her, parrying her attacks and avoiding the perilous attacks. When she's up in the air, her perilous attack is a grab attack from above. Just sidestep at the right time. When you see the perilous attack symbol when she is on the ground, you need to jump to avoid her swipe. If you need to heal or restore your posture, take use of the columns!
I really did "git gud" in the first phase, so here I managed to defeat her without getting hit (but trust me, I tried loads of times).
The second phase, obviously, is much harder. She uses light projectiles additionally to her attacks, so avoid them. And she can also summon illusionary enemies who can deal damage to you. They each disappear with one attack, but don't pay attention to them. You can use Snap Seeds to make them vanish, but this is a hard item to get by and you might be in trouble if you rely on it too much and then you're out of them. So I never even began using them. My strategy was to ignore the illusions completely and start running in circles once they're here. Eventually, she will use them all to start a huge projectile attack. If it hits you, all of them will hit you and you're dead. So just keep on running, it won't hit you. After the attack, continue fighting her (as in phase one). But she has a longer combo now too, which ends in a swipe (remember to jump!). With that trick, I really didn't find it that hard to defeat her. If you got her first phase down and manage to keep all your healing potions, you will manage phase two as well.
