You can play as the originally bonus stage exclusive version of any character in Last Bronx's PS2 port, by simply pressing left or right away from their portrait when selecting them. There's also a setting in the Extra Options menu (unlocked by highlighting credits and holding right) that's required for them to show up.
The flat gray version was originally made due to the Saturn version's weaker processing, but the PC version included it for users with less powerful PCs.

I've never played Last Bronx before today, so I absolutely suck arse at it. That much should be apparent from the footage.
