Latvian Bacon Buns (Pīrāgi , Speķa Pīrādziņi, Piroshki)
*** NOTE **** I say 6 cups of flour in the video, when it should only be 3 because I was doing a half recipe.

These soft pillowy buns are filled with delicious bacon and onions. A traditional treat usually made for special occasions like Christmas.
Pastry:
1/2 cup warm water
2 tsp sugar
2 envelopes instant dry yeast (4.5 tsp)
2 cups hot milk
1/2 cup oil (or bacon grease)
2 tbsp sugar
2 tsp salt
2 eggs
1/2 cup sour cream
6 to 6 1/2 cups all purpose flour
Filing:
2 lbs bacon diced fine
1 medium onion diced
Salt and pepper
Egg wash:
1 egg beaten with 1 tsp water
The dough pieces you cut before rolling them out should be something like a one inch cube.
This recipe should make about 80 of them. Bake at 400 F for 15 minutes or so until golden brown.
