Run any OS inside Windows 10/11 with Virtualbox and use your eye tracker and win assistive software/hardware. Linux distributions like the popular Ubuntu or Zorin OS, Manjaro, Fedora, Elementary and so on are often well suited for this. MacOS is also possible but it's more resource intensive and Virtualbox isn't the best method for this. Other Virtual machine solutions that can harness your pc GPU (if available) will run MacOS much better. You can also remotely control a physical Mac computer with Parsec on your Windows PC if you really want to access a Mac with Eye tracking.
