There are a total of 20 Saintly Quintessence's per playthrough in Lords of the Fallen (2023). The Saintly Quintessence's allow you to upgrade the Sanguinarix, which is used to replenish lost health. Upgrading the Sanguinarix will increase the amount of times you can use it and the amount of HP it recovers.
None of the Saintly Quintessence's are missable and you can go back and get any you have missed. You cannot check which ones you already have, so you'll have to check all the locations unless you remember getting them at specific spots.
Maxing out the Sanguinarix will reward you with the "Salvation in Blood" trophy / achievement, and all upgrades will carry over to New Game+
