Making Muffins with a Blender!! #easyrecipe
My 🍫 Fluffy Chocolate Oat Muffins (makes 4 XL muffins)
1/2 cup (112 ml) plain oat milk
1/2 cup (116 ml) plain greek yogurt
1/4 cup (55g) butter, melted
1 (50g) large egg
1 tsp (5 ml) vanilla
2 dates, pitted optional
1 cup (120g) oat flour
1/3 cup (30g) cocoa powder
1/4 cup (50g) sugar add up to 2/3 cup total if you’re not eating with ice cream!
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Topping
1/2 cup chocolate morsels
Instructions
1. Preheat oven to 400F convection bake
2. Place ingredients in a blender, and blend until thickened and combined
3. Line muffin tins (makes 4 XL)
4. Pour batter, and tap the tray on a surface to rid of large air bubbles
5. Add chocolate morsels to your desire
6. Bake at 400F for 10 minutes, then lower the oven heat to 350F and continue baking for 8 minutes, or until a toothpick inserted comes out clean
7. Best enjoyed warm, enjoy!
