In part two of this making spicy pepper jerky I went ahead and spread out the meat onto drying racks. With doing so much meat I was expecting a much longer drying time. The meat was so thin though that 6 hours ended up being too long and kind of messed up the texture of the meat. Still tastes good, just a little crispier than I like.
