This is done by using the execute if entity command in a repeat unconditional always active command block, these are the commands used in the video:
Check for a diamond: /execute if entity @p[nbt={Inventory:[{id:"minecraft:diamond"}]}]
Check for a named diamond: /execute if entity @p[nbt={Inventory:[{id:"minecraft:diamond",tag:{display:{Name:'{"text":"ItemNameHere"}'}}}]}]
Check for a diamond and dirt: execute if entity @p[nbt={Inventory:[{id:"minecraft:diamond"},{id:"minecraft:dirt"}]}]
