NOTE: I've been playing this game for 30 years. It's definitely my childhood's favorite and most played game, and still remains my favorite retro MK to this day. However, I've always picked a few characters for the most part, and by that I mean mostly the ninjas. I don't like change, so with the exception of an odd time here and there goofing off, I nearly always go through a ladder as one of the ninjas, because I love all three to death.
So, in this stream, beating the game with every character, I come to the discover that the old tricks and exploits do NOT work with every character, mostly the backward jump lure. The exploit does not work with Liu Kang, Kung Lao, Mileena, Kitana, Raiden, and Shang Tsung, but it works with the ninjas, Cage, Jax, and Baraka
That's why when you see a "how to beat MKII AI" video (which granted, I had never looked one up until after this), it's nearly always using one of the second group of characters mentioned here.
Here, over the years, I randomly wrote down (mostly to myself) AI exploits I found along the way while playing MK on various systems. It is far from complete or well-written, but I though I might as well share it here, maybe someone will find it useful (I'll update it as I find stuff as I play it on the channel for here on out):

Hardware show & tell at the end of all my playthroughs.
240p & 480p missing? YouTube glitch, I have no control over it.
Chapters missing? They come and go, also up to YouTube. I put all timestamps at the very top of my video descriptions for convenience, in case they are gone while you're watching this.
I'm streaming now, so when there's people in the chat, obviously I'm going to talk to them, as anyone streaming would. Please utilize timestamps or fast-forwarding if needed.
Viewer discretion is advised. Strong language not suitable for kids or the sensitive adults. Occasional shouting and bouts of anger throughout the video, especially on harder sections.
The footage you see here is raw and was not enhanced in post. Audio levels were improved and balanced, and meet YouTube's LUFS standard (-14).
