I've been using Midi2Sheet to make sheet music out of my music playtime, but it produces weird looking notation! I ended up trying Dorico since it seems to have good reputation. Although I still haven't figured out all the features and how to do things in there, recording is pretty simple enough, as well as using other VSTs in it. I'm using the FL Studio ASIO with this because that one doesn't have any midi lag at all from my digital piano to the computer. The other ASIO versions have a few seconds or milliseconds of lag, which can lead to confusion while playing! Next time I record a piano tune, I'll use this to make sheet music so whoever looks into the ones I usually provide won't be confused.
