When using an AMS loadout, and you are trying to get the maximum amount of missiles shot down, you need to try and centrally locate yourself so that your AMSs have the chance to shoot at missiles passing by you.

This is one way that you can get over 1600 missiles shot down! (or do over 1600 anti-missile damage, however it is calculated.)
