I've decided to test this since Need For Speed Carbon OTC actually had 4 engine sounds for most of the cars in the files of the game. And it seems like you indeed can pick a value beyond the default amount of engines and it will assign the related sound.
Said engines do not actually have any parameters related to performance assigned, so they will return your car to stock values, but the sound will change.
This is just a short video demonstrating how to choose an engine beyond the menu values... Not even sure if it is worth the upload.
I've also removed the turbo sound from the Corvette, but this is a separate hack, done via savegame editing. I've also probably actually swapped Corvette sounds with Firebird's, not sure. And do not quite remember at this point.
