So it turns out, since this boss doesn't have a cutscene or a trigger far in the room you can trigger the fight and backroll into the fog gate causing his AI to basically loop around wandering the arena "pursuing" you.

Unfortunately, I was unable to escape the gate after defeating the boss, resulting in a loss of progress due to restarting.
