On August 4, 1693, a French monk by the name of Dom Perignon supposedly invented champagne, but is this true? Dom Perignon was a Benedictine monk who lived from 1638 to 1715 and oversaw the vineyard at the Saint-Pierre d’Hautvillers abbey in the Champagne region of France. It is said that upon tasting the first batch of a new bubbling wine he invented, Perignon exclaimed “Come quickly, I am tasting the stars!” but in reality, this myth appears to have been made up some time in the 19th century as a very effective marketing ploy by a French winemaker. In fact, sparkling wine was already being produced in the Champagne region when Dom Perignon became a monk, and Perignon simply made several improvements to the process, including blending grapes from multiple vineyards, advocating for mechanical wine presses, and establishing guidelines on pruning and harvesting grape vines that are still followed today.
