Parasite Eve is the first Playstation1 game I bought with my pocket money back in '99 when I was 11 years old and it stayed with me to this day. The cinematic FMV sequences were more than ground breaking at the time, and I used to record the cutscenes on VHS tapes and share it with my friends (internet wasn't much of a thing back then).
It's funny because, 25 years later, I still do the same thing, with the same games, but on YouTube.

Parasite Eve is unorthodox in the way that the game is a sequel… to a book (https://en.wikipedia.org/wiki/Parasit...)
The game was heavily advertised as a cinematic experience and I couldn't disagree with that. More than half of your playtime will be spent between dialogues and cutscenes.
This could have easily worked against the game. But well written characters, an engaging story and the urban setting (something that wasn't that popular in Rpgs pre-2000's) turn the whole experience into a classic. Furthermore, the crossover between horror and RPGs is really well balanced and they successfully managed to pull off an entertaining gameplay out of it.

Even if the game isn't particularly described as ''underrated'', Parasite Eve got lost in time between Final Fantasy, Kingdom Heart, Chrono Trigger and all the other products that Square/SquareSoft/SquareEnix produced until it saturated the market.
But the game is far from being forgotten, and maybe at some point (like Silent Hill) the fandom will be vocal enough that SquareEnix would be forced to bring back the franchise from the catacombs.

Parasite Eve live among those games that paved the way for the big AAA narratives game of today.
This is the golden era of RPGs at best.
