The Aztecs are an extremely aggressive civilization that benefits from constant warmongering as they gain culture when they kill their enemies. This makes them unique as they can declare war with the sole purpose of obtaining social policies, even if they do not plan to take cities. This unique bonus also stacks with the honor opener, granting twice the amount of culture from barbarians, which allows the Aztecs to gain their important policies much faster than any other civilization.
Their jaguars are unique warriors that moves faster and fights better in the forests and jungles. They also heal themselves whenever they kill an enemy unit, which allows them to sustain themselves by constant battle instead of having to pause and fortify. The best part about jaguars is that they retain all their unique promotions upon upgrading to swordsmen, meaning you can theoretically field self-healing, forest and jungle-traversing infantry in the late-game, if you manage to keep them alive that is.
The Floating Gardens is one of the best buildings in the game. Being a unique water mill, it forces the Aztecs to settle on rivers and lakes to even be able to access it, but in return it offers a large boost to food, as well as turning normal lake tiles into absolute gold.
Overall, the Aztecs have an insanely strong early game, with potential for a strong late-game if they can keep their jaguars alive. They are not meant to be played peacefully, as they lose out on a lot of benefits doing this, so be prepared to be an aggressive bastard!
