Well... It's possible... But I wouldn't advise it.
Outside azria you can manage perfectly, with a proper RM which would heal you NON-STOP.
When you become a higher level, I'm sure you want to go to Azria though. Well, that's not possible with full-STR (i.e. with low funding - I can imagine that a +10 set can get you there even with full-STR, but I never tried that).
So: Take a bunch of STA, since it is the best stat for a Knight.
STA gives HP and defense.
STR gives power.
The amount of HP+defense STA gives you a bunch of tankability, allowing you to tank more monsters at the same time. Tanking more monsters gives you more exp/hour than taking less with more killing speed (STR).
Furthermore, a knight should excel in tanking for dungeons - that's essentially their job - for which a lot of STA is useful.
