The simpler way to put it is: hard modes & permadeath playthroughs allow you to really appreciate the game, to actually slow it down and fully flesh out the mechanics in a way you couldn't do even in the original because it was too easy or over too quick. Meanwhile, speedruns seek to trample over the entire experience and subvert the mechanics as much as possible.
