With the help of Alia5's GloSC program, I used the desktop Steam overlay to use a series of 9 button touch menus to bind most of the keys that the left and right hands would play to the corresponding trackpads. 9 buttons in particular because a staff consists of 9 keys spread between 5 lines and 4 spaces, so the top left touch menu item for me is the top line of the staff, and the bottom right is the bottom line of the staff. Quite easy to keep track of. From there, holding the right bumper mode shifts the trackpad touch menu to correspond to notes above the staff, although to keep some uniformity, the bindings start on the top center touch menu item, so that the same trackpad regions still correspond to notes on spaces and lines. Also, holding the right triggers shifts the trackapd's bindings to chord bindings, which are bound to notes below the staff.

I don't actually play piano in real life, but I thought it would be fun to push the Steam controller's software and see what it could do with this type of thing. If you have the coordination, it can do well for basic songs that don't use piano chords, and you can even make separate action sets (like I did) for different piano scales (that make use of black keys throughout the song), so you play the same keys as is listed, and they are converted to the right flats / sharps automatically. Playing multiple notes at once with only a thumb on each side to work with is tricky, but a friend suggested it could be possible to at least try using the grips as chord buttons and using the touch menus to assign set note combos on them.
