The issue that caused yesterday's problematic recording, was that I wasn't able to use my usual emulator (No$GBA) as it would crash every time I tried to save, or sometimes upon entering a battle (as seen in part 1). Instead I used Desmume emulator.
The problem with Desmume is it needs a LOT of processing power, and is very sensitive to other programs working in the background. It would run fine with DXtory recording the gameplay, but when I opened Audacity, which is what I usually record my commentary with, Desmume would slow down considerably and this is what caused the slow-down on the overworld screen. Battles use less processing power, so that's why they were able to run faster.
In the end what I decided to do was keep Audacity close will I record gameplay using Desmume and DXtory, and record my commentary onto my iPhone (which I think has actually come out clearer!) using an app that let's me email the audio file to myself. Once I'm done recording I just load the commentary into Audacity so I can reduce a bit of background fuzz, and then I just connect everything together and VOILA!
The only hiccup we saw today was a few seconds where I accidentally hit the button to stop DXtory recording, like the idiot that I am!
