This has no known impact on the game - you already get the achievement/trophy for finding it the 6th and final time, but feels like a nice way to close the book this chapter of John's story and signify the end of your quest.
However, there are many unsolved mysteries in RDR2. Perhaps having the Squirrel statue in your possession, or returning it to it's final home may be necessary to unlock something else? It is odd the achievement triggers before your return it for a final time.
