I finally took down Ponce de Freon, the Rogue Legacy super-boss that gave me the most trouble. Unfortunately there's not much advice I can give for this fight—you just have to learn how much room you have between fires and finesse your jumps really well. Be patient. Save your Barbarian Shout for when you need to open up space to help you get some hits in without getting trapped. Good luck!
