The coins are unlocked by getting the keys. All the keys will give you 3 coins, but missing some might yield you with 1 or 2. The keys ranged from easy to very hard, but were overall fun to get. There are 8 keys in total. The two keys from 67% and 71% were, by far, the hardest ones. On a separate note, I died at 97% once.
