Glad I got my left joy-con fixed before this came out. Latest joycon firmware (4.19 and above) be ruining everything with its occasional lag spikes.
Gyro aiming is done via JoyShockMapper.

Gyro sensitivity = 1.5 - 3 (real-world rotation, custom accel curve)
Vertical sensitivity scale = 0.67x (1 - 2)
Custom accel min-max gyro speed thresholds = 5 - 50 (Degrees per second)
