This video is the Ps4 version played on ps5 via backward compatibility - Performance/Fidelity modes have been removed and replaced by a single mode.

EA just released this update (12th January 2021) which includes the following patch notes:

-Framerate has been increased to 60 FPS (up from 45 FPS)
-Postprocessing increased to 1440p
-Dynamic resolution has been disabled and the game is rendering at 1200p (up from 810-1080p)


Summary:
Resolution mode (4k/30fps) has been removed, and performance mode (60fps) is now the only mode available. Performance mode has had a resolution bump to 1200p (previously 1080p) and post-processing effects such as smoke, depth of field etc are now rendering at 1440p.
The game is now more sharper (less blurry).


4k is no longer available as of this update.
