In this mission, you are surrounded by 3 sultans (what a way to start), but it is a fairly easy mission. Just make sure you wall up and mass up archers and place them onto the gates. The gates do not have stairs so be sure to place them as well so that your archers can mount if the gates close. You also want to thicken the walls because the enemy will melee those 1 layered walls and you can easily be breached.

Archers are the best early game unit for defense. They can deal with those pyromaniac arsonists easily and when in mass, can kill tanky saracen warriors so as long as there is a brazier nearby.

When you have the stone and gold, build trebuchets and aim for the enemy granary and houses. This will disrupt their economy and flow of people, buying you some relief time to prepare your army.

Tip: You can place braziers on top of your castle.
