During this video, you may not see any difference between the 2 options other than the Vsync one looking a bit laggier than the one without Vsync. However, during real-time gameplay when you're not recording (or when playing in general), Vsync On looks very smooth - graphics look very well detailed, but the triangle character you control feels super slow, unresponsive and kinda hard to control in general.
Without Vsync, the game doesn't look very smooth - graphics start to look broken and pixelated, otherwise known as screen tearing. However, the triangle character controls pretty fast and responsively and don't really feel restricted, unlike the Vsync On option.

I personally would recommend you play the game with Vsync off, though everything depends on your likings.

I am also the first person on YouTube to do this kind of thing. How come no one's done this yet? Weird.
