It is time to enter a new course after going through the first four, this area is Sirena Beach, and this is where Hotel Delfino is located, but when we get there, there is electric goop covering where the hotel once was, and we deal with the Manta Storm, which is said to have been the cause of the disappearance of Hotel Delfino.

After having to complete the first four courses in Delfino Plaza, it is finally time to enter a new course, and to access Sirena Beach, you need to have Yoshi and eat the pineapple blocking the Warp Pipe on top of a building in Delfino Plaza.
Sirena Beach is a really nice course, as it takes place in sunset, its most well known place is Hotel Delfino, but when we first enter, the hotel is not present. The first episode is The Manta Storm, and we see there is electric goop covering most of Sirena Beach, and the hotel manager tells Mario that his hotel has disappeared, and this is where the boss shows up.
This is Phantamanta, or just Manta, it is a large Manta-like goop that leaves electric goop when it moves, and it is very large, but if you spray it with FLUDD, it will split into smaller versions of itself, and they can divide into three, then four, and then four more, so you have a total of 96 small Mantas, and once only the small Mantas remain, they will get angry and start going for Mario, but they should take one hit to take out. Once all the Mantas are defeated, the hotel will be restored and you can get your Shine Sprite, this is a very tricky boss fight, and it has the same boss theme as the Gatekeepers, but I have read that it is a scarier remix of that theme.
Episode 2 is the Hotel Lobby's Secret, and to enter the hotel, you have to talk to the Pianta at the entrance, and when you are inside, there are a bunch of Boos inside, the Pink Boos turn into platforms when sprayed, and you can use them to climb to the Golden Boo Statue, which leads to a FLUDD-less course.
The start of the course has three Strollin' Stus, and you have to jump on the Winged Strollin' Stus to get to the next platforms, then Wall Jump and break the blocks to get to the higher point. I like how you can see the 8-bit Mario sprite in the background like with Ricco Tower. The next section is the sand blocks, which lead to a structure of blocks, you can Ground Pound the watermelon blocks to break then, and you will want to do that to get to the rotating gear-shaped platform that will move to a pyramid of sand blocks, and that leads to a platform with the Shine Sprite.
Next is Mysterious Hotel Delfino, so it is back to the hotel again, and you will need Yoshi for this, but the pineapple requires going through a path, first you have to enter the male's restroom and it will take you to one of the rooms, spray the painting to reveal a Boo picture, which leads to the next room, spray the closet to reveal another picture of a Boo, then spray the two Pink Boos and then spray the bookshelf to the next room, and Ground Pound a panel and it will take you to a storage room. The posters read "Dolphic", which is a reference to Dolphic Island, which is the Japanese name for Isle Delfino, and the Japanese name for Delfino Plaza is Dolphic Town.
The pineapples are in crates which you will have to break, give them to Yoshi, and enter an open door on the third floor and it will take you to the attic, and I like how the Pianta references Luigi's Mansion by talking about using a vacuum cleaner to remove the Boos. Yoshi can eat the Sleepy Boos, so you will have to eat one of them to get through, and Ground Pound the crack on the floor and it will take you to the pool where the Shine Sprite is, which you wouldn't otherwise be able to enter as the Pianta will prevent you from entering without any proper swimwear, is he not aware that there is a Shine Sprite there.
The Secret of Casino Delfino is next, and to enter the casino, talk to the Pianta on the first floor, that is the bellhop, and you can enter the casino. Ground Pound the slot machines, one of which gives you a Blue Coin, and spraying the large slot machines till you get Triple 7, one has all slots move at once, and another will move separately. The curtains rise, and you have to spray every panel until you reveal a Shine Sprite, and a Warp Pipe will take you to the secret course.
This one has moving blocks, you will have to avoid getting crushed by them, and there are some that move and take you to another part of the course, and you have to get through long moving blocks and a large rotating cube to the Shine Sprite.
