HOW I GOT DAGGERFALL TO WORK ON MODERN WINDOWS PCs:

Download the game as freeware:
http://en.uesp.net/wiki/Daggerfall:Files

Run DaggerfallSetup.exe and install it to any folder.

Once installed, go to that folder and edit DosBoxDaggerfall.conf and change the entire file's contents to the following (ignore the lines that start with ~):
