Enchanting is used to obviously enchant different items to make them more powerful. I don't really like using enchanted items because you always have to have a soul gem or 500 to recharge them, but it can be incredibly useful for difficult parts of this game.

To learn enchantments, you'll want to disenchant enchanted items. On your travels, always pick up magical items and don't sell them, but instead disenchant them. You'll gain levels and perks, and be able to enchant your favorite non-enchanted items later on (with a soul gem, of course).
