One is unlocked by simply completing the story missions (this unlocks the 'Imperator' trophy / achievement); the second, far more in-depth ending is shown after completing the final mission Punch the Shark with all of your crew mate's loyalty quests completed (this unlocks the 'Saints&Sensibility' trophy / achievement).
