I played so much off stream that I became confident in this build and playstyle then go on stream and just lane like that, isn't that funny?

We'll get em next time. But

No one likes me taking Grasp on Gwen, no one likes me taking AD on Gwen, but people also don't wanna see Meta Gwen (okay I have no evidence for that one), so I did all of the above.

For real though, Grasp in top lane is really nice to poke down an enemy quickly with E, allowing you to harass well, it's like a Conqueror that doesn't require you to all-in. Gwen is pretty damn good at all-inning a lot of top laners though, so I'd see why you'd prefer Conqueror.
The hp stacking alongside a Frostfire Gauntlet give a considerable amount of durability, especially with Frostfire's 100 HP Mythic passive granting tankiness to your non-tanky items like BOTRK, Nashor's Tooth, and others. And being a high DPS champion, lowering that DPS a bit in order to live a lot longer is often a worthy trade I think. Less damage up front, but hopefully more damage in that life, and you can afford more risky plays and fights.
Bruisers also naturally pose massive threats to ADCs, so by taking AD for flat damage rather than AP (AP is still really good for this though! I usually pick for damage types we need) as well as having some decent defense and slows on BOTRK and Frostfire, ADCs both cannot escape nor fight back very well, and most others cannot interfere due to Gwen's W. Alternatively, she can shred other team members like bruisers, juggernauts, and tanks while ignoring ADC and Mage supporting fire.

Gwen is fun, but I don't see anyone playing her in my games. If you've never played her, I'd urge you to try.
