In tremulous and most quake 3 engine based games, there is acutlaly server code that prevents poeple from 'jitterring' with latency spikes but it only has a tolerance of like 1 server frame. After that they jsut freeze the server side avatar such as in this video (even hough the servrer still to some extent, continues mulates the avatar's physics which may give the warping effect to server-side avatars)
