For the folks wishing for a more detailed description of how I got these horses in a vanilla world:

1. Spawn in any type of Horse with a Spawn Egg and Save and Exit your world.
2. Open the level.dat file with MCEdit. http://www.minecraftforum.net/topic/13807-mcedit-minecraft-world-editor-now-open-source/
3. Find the red square that is the Horse entity position and select the area it is in.
4. Save the selected area as a .schematic file if the entity has been selected.
5. Open the .schematic file with NBTEdit. http://www.minecraftforum.net/topic/6661-nbtedit/
6. Go into the Entity properties and find the "Type" tag.
7. Change the value from "0" to "3" or "4" for the Undead Horses*!
8. Save the .schematic file to a recognizable area on your computer.
9. Import the .schematic file to any world you please.
10. Save the world and login, enjoy!

*Type "3" will be the Rotten Green Undead Horse!
*Type "4" will be the Skeletal Undead Horse!
