Ingredients
½ cup of hemp seeds
1 cup of pumpkin seeds
½ cup of cashew
½ cup of walnut
2/3 cup of oat flour (I do 1/3 oats. 1/3 amaranth, 1/3 teff) or whatever whole grains or
whole grain flour I have on hands.
½ tsp sea salt
1/3 c flaxseed meal
1/3 c carob chips or raisin or dried cherries
2/3 c of Date paste (check this video if you want to learn how to make date paste. Easy
as putting date in a blender and water and blend it..

1 tbsp of vanilla
Based on the consistency of the batter add 1-3 tbsp of plant milk. I usually add 1 tbsp of almond
milk (it could be tigernuts milk or cashew or oat milk) . Try with less if possible.
Add your favorite spices: Cinnamon, pumpkin spices, nutmeg, cloves, cardamon… it’s your
food, make it tasty. I used pumpkin spices and additional nutmeg and cinnamon.
1. Preheat your oven to 350 F
2. Ground your pumpkin seeds, cashew and walnuts. You don’t want to create a nut butter.
It is a coarse flour
3. In a small bowl, add the hemp seeds and the grounded nuts and add all the other
ingredients. Mix well
4. Put a parchment paper on your cookie sheet
5. I make 10-12 cookies from the batter…. It all depends how big a cookie you want
6. I form a small ball with the cookie dough with my hand
7. Drop the ball on the parchment paper and with a fork spread it.
8. Bake for 10 – 15 minutes, or until golden brown, checking often to prevent burning
