Have you ever hopped on that "new, popular game" bandwagon, or heard about it from your friends?
You might've played REPO, Lethal Company, Peak, Schedule 1, etc. But these new games aren't meant to last - or the majority aren't. 90% of them just want to be picked up by a streamer and go viral, thus recouping development costs.
But as we've seen with battle royale and microtransactions, whatever works, other companies follow suit. If one indie game became popular and had this specific gameplay formula, why shouldn't this one do the same thing, just a little different?
